If she graded the paper late, or lost it and found it later, then I would say something like, "I know that my paper was graded later than the rest of the classes, but just because my paper was lost or misplaced does not mean it is late.

I understand if you are busy today, but I would like for you to figure your schedule out in advance before changing my own schedule. It is inconsiderate of you to do that.

Staying assertive might not get you everything you want, but others will at least recognize your opinions on things. Staying assertive also ensures that you know your own self-worth, which is most important.
